Since 1970, the availability of red meat (mostly beef) is down about one-sixth, fish is up by about one-quarter, and poultry has increased almost twofold. On the other hand, summing the pounds per capita in these three components of the meat group suggests that the combined total poundage available for consumption is up 8%. The largest increase occurred in the period after 1980. Coincidentally, egg availability that had been declining appears to be increasing, a trend that in part reflects consumer use of more prepared foods.
